Our Dough Philosophy
We keep our dough simple- just flour, water and salt.
Mixed slowly, alternating between hand folds and gentle machine turns to build strength and depth of flavour.
After that, the dough rests and ferments — anywhere from 48 to 96 hours — developing its signature aroma and light texture. Each piece is hand-shaped, giving every crust its own character: puffy, airy, and uniquely imperfect.
Finally, it meets Pearl — our bespoke woodfired oven — where flame and craft come together to finish every pizza with a golden, blistered crust.
